PW's Calzones - Kinda

Friday night is Steak Night at my dad's
but it was cold and rainy
so..........
 the son and I decide to stay in
so........
what to eat for dinner?
Can you believe, a guy who has never really looked in a cookbook, has been trained to go to The Pioneer Woman Cooks cookbook to pick out  recipes.

It started back when he selected with the Beef Enchiladas from her cookbook.

I mentioned it on the phone yesterday, and expected a little push back, but got the response, "Ok, where is it?"
He knows anything from this cookbook is complete comfort food GOODNESS.

Obviously by the title of this blog, he chose Calzones -

Her recipe calls for homemade pizza dough.
 I'm not really a "dough" girl..
and 
I just happened to have 2 tubes of Pillsbury Pizza dough 

Her recipe also calls for breakfast sausage and ground beef.  We use spicy italian sausage in all our italian food so we did so here as well. 
Ryan loves pepperoni, so I bought the big slices and used this instead of ground beef.

One more substitution I made is cream cheese instead of ricotta.  We're not big ricotta cheese fans, and I have about 10 boxes of cream cheese after the latest 10 for 10 sale at Kroger.

So, really all I did is use PW's recipe as a guideline with our own ingredients.
The calzones turned out very good for a first try.
The filling was great.

I just need to work on my "dough" skills.

Cheese

Another thing that I  ...

because HOTTIE is cool 

this cheese is soft chevre*  spread 
similar to cream cheese 
made in Texas 
with flecks of  jalapenos

YUM!

(*- chevre is cheese made from goat's milk)

Wine Snob Confession #4


I bought this wine about a year ago for the first time at Costco.

 I haven't seen it there in awhile, so I was very happy to discover it at Kroger.

I'm not a big fan of Argentinan wines, but Pascual Toso Malbec rocks.

Taste Test


While at Central Market in Dallas (one of my fav-O-rite stores)

They were doing many taste tests.
I almost walked right on by this one..

but then I thought "duh, that's the purpose of taste tests, to try weird things, right?"

This sauce is YUMMY!  So, so good!

One of my fav-O-rite Things...

There is something about blue corn taco shells that make a homemade beef taco delicious.
I especially love them with shredded monterey cheese, sour cream, lettuce and tomatoes.  These are not in just any grocery store, unfortunately.
I buy mine at Central Market in Dallas.
