Dallas Farmers Market - Jorge Cruz's Recipes

Here are the recipes I promised from my earlier post

Pan Fried Cornmeal Crusted Deviled Eggs


Ingredients

1 dozen eggs
1 cup yellow cornmeal
1/2 cup flour
1/2 cup buttermilk
1 cup Texas Olive Oil

Directions

Boil eggs for 15 minutes, drain, cool  and remove shells
Combine cornmeal and flour in a bowl
Place buttermilk in a separate bowl

Pass eggs through the buttermilk, then the cornmeal/flour mixture
place on a flat pan with parchment paper until ready to cook

Heat olive oil in a saute pan to medium hot temperature
Gently place eggs in oil & turn to brown
(about 3 minutes)
Cut in half, garnish, and serve

Roasted Jalapeno Aioli

Ingredients
1 cup mayonnaise
1 tblsp fresh lime juice
1 large roasted jalapeno
1 tblsp chopped cilantro
Salt & Pepper

Directions
Combine all ingredients in a food processor until smooth
Salt & pepper to taste

Citrus Pickled Red Onion

Ingredients
1 large red onion, julienne cut
2 cups red wine vinegar
1 fresh  lime cut in wedges
1 fresh lemon cut in wedges
1 fresh orange cut in wedges

Bring vinegar to a boil in a stock pan & add onions
Cook until translucent and done
Remove from heat and allow onions to sit in vinegar
until cool and ready to use
Drain the vinegar and discard
Combine onions with citrus
Add salt & pepper to taste

Lamb Chop "Lollipops"


Ingredients
1 pound Domestic Rack of Lamb
1 ounce Texas Olive Oil
Salt & Pepper

Directions
Heat saute pan to medium hot temperature
Pan sear lamb 3 minutes on each side (for rare to medium rare)
Salt & Pepper to taste

Texas Chimichurri Sauce

Ingredients
1/2 cup Texas Olive Oil
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
1 tsp chopped fresh parsley
1 tsp chopped fresh garlic
Salt & Pepper to taste

Directions
Combine all ingredients in a large mixing bowl

Fresh Blackeyed Pea Relish

Ingredients
1 pound fresh blackeyed peas
1 tblsp chopped fresh red bell pepper
1 tblsp chopped red onion
1 tblsp chopped cilantro
2 tblsp Texas Olive Oil
2 tblsp fresh lime juice
Salt & Pepper to taste

Directions
Cook peas in boiling water with salt for 15 to 20 minutes until done
Drain and chill
Combine with remaining ingredients
