Escondido Idea House Open House Schedule and Directions - Southern Living

I am so excited about this. I drive through Marble Falls (which is only 8 miles away from the Southern Living Idea House in Horseshoe Bay) when I go to see my Aunt Janae in Fredericksburg. I've been wanting to take my friends to Marble Falls and Horseshoe Bay since, like, forever... now we have a good reason to go!

Test Kitchen - Fiesta Taco Lasagna

This is very delicious.


I got this recipe from Southern Living.

I followed the directions exactly.
Well, almost exactly... I added sharp cheddar on top as well.
You can never have enough cheese!

It was extremely quick and easy to make.

I LOVE the "no boil" lasagna noodles. 

I will definitely recommend!

Making Pumpkin Fudge



only requires 1/2 cup - so you might want to find something else to make that has pumpkin in it



This is what it looks like with the first 6 ingredients mixed together before it gets to 234 degrees (soft-ball stage)

Remove from heat & add

The stickiest stuff in the whole wide world.

I didn't take a picture of the toasted pecans.. they aren't as exciting.
Also didn't take a picture of the pan with all these ingredients post soft-ball stage.
It's hard work, and you have to move fast.
I recommend adding EVERYTHING - marshmallow cream, white chocolate chips, pecans, and vanilla all at once.. then, stir stir stir with a heavy wooden spoon until you can't stir anymore.

Pumpkin Fudge

I got this recipe from Southern Living. I wasn't sure how I'd like pumpkin flavored fudge. OMG!!
It's FABULOUSLY DELICIOUS!!!
Ingredients:
3 cups sugar
3/4 cup melted butter
2/3 cup evaporated milk
1/2 cup canned pumpkin
2 tablespoons corn syrup
1 teaspoon pumpkin pie spice
1 (12-ounce) package white chocolate morsels
1 (7-ounce) jar marshmallow creme
1 cup chopped pecans, toasted
1 teaspoon vanilla extract
Directions:
Stir together first 6 ingredients in a 3 1/2 quart saucepan over medium-high heat, and cook, stirring constantly, until mixture comes to a boil. Cook, stirring constantly, until a candy thermometer registers 234 degrees (soft-ball stage) - about 12 minutes.
Remove pan from heat; stir in remaining ingredients until well blended. Pour into a greased aluminum foil-lined 9-inch square pan. Let stand 2 hours or until completely cool. Cut fudge into squares.

Tee's Corn Pudding


Ingredients:

1/4 cup sugar
3 tablespoons all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons salt
6 large eggs
2 cups whipping cream
1/2 cup butter, melted
6 cups fresh or frozen corn kernels
Directions:
Combine first 4 ingredients -sugar to salt. In a separate bowl, whisk together eggs, whipping cream and butter. Gradually, add sugar mixture, whisking until smooth; stir in corn. Pour mixture in a lightly greased 13X9 inch baking dish.
Bake at 350 degrees for 45 minutes or until golden brown and set. Let stand 5 minutes.
Makes 8 servings.

This is a Southern Living recipe. This was my first time to make a corn pudding. It turned out great, and it was delicious for such a simple dish.

Cranberry Margarito

That's correct. MAR-GA-RI-TO!!! Where tequila meets mojito mix! Awesome combination.

I made these last year at Christmas. They were a big hit. They are pink and extremely festive. Be sure to use FROZEN mojito mix - usually found with in the freezer section with juices.
