Tea Time

This is Day 16 of no Diet Coke

Trying different teas has become my latest thing

Jenn from Rook No. 17 recommended Harney & Sons

I was very excited this past Saturday
when I discovered that Williams Sonoma
carries Harney & Sons Teas
I admit I bought Paris for the name
but also because
 it's a black tea
with vanilla, fruit & citrus flavors

I discovered True Brew tea at Kroger

I do not typically like bottled teas, but this one is very good

I need caffeine to get going in the morning
So these are perfect when I do not have time to brew my own

What makes it even cooler
This company is based here locally
in Plano Texas


Whole Foods recently opened this store
in Dallas
off Park Lane & Central Expressway

I cannot wait to try out the these teas

Heath Bar German Chocolate Cake


Heath Bar German Chocolate Cake

Ingredients
1 box german chocolate cake
1 can sweetened condense milk
1 bottle or jar caramel sauce
1 tub cool whip
4-5 Heath or Skor Bars (chopped)

Directions
Bake cake per directions on the box
Cool 5 minutes
Poke holes in the cake
Combine sweetened condense milk and caramel sauce in a separate bowl
Pour over cake
Refrigerate until cool
Cover with cool whip
Top with chopped heath or skor bars

Dallas Farmers Market - Jorge Cruz's Recipes

Here are the recipes I promised from my earlier post

Pan Fried Cornmeal Crusted Deviled Eggs


Ingredients

1 dozen eggs
1 cup yellow cornmeal
1/2 cup flour
1/2 cup buttermilk
1 cup Texas Olive Oil

Directions

Boil eggs for 15 minutes, drain, cool  and remove shells
Combine cornmeal and flour in a bowl
Place buttermilk in a separate bowl

Pass eggs through the buttermilk, then the cornmeal/flour mixture
place on a flat pan with parchment paper until ready to cook

Heat olive oil in a saute pan to medium hot temperature
Gently place eggs in oil & turn to brown
(about 3 minutes)
Cut in half, garnish, and serve

Roasted Jalapeno Aioli

Ingredients
1 cup mayonnaise
1 tblsp fresh lime juice
1 large roasted jalapeno
1 tblsp chopped cilantro
Salt & Pepper

Directions
Combine all ingredients in a food processor until smooth
Salt & pepper to taste

Citrus Pickled Red Onion

Ingredients
1 large red onion, julienne cut
2 cups red wine vinegar
1 fresh  lime cut in wedges
1 fresh lemon cut in wedges
1 fresh orange cut in wedges

Bring vinegar to a boil in a stock pan & add onions
Cook until translucent and done
Remove from heat and allow onions to sit in vinegar
until cool and ready to use
Drain the vinegar and discard
Combine onions with citrus
Add salt & pepper to taste

Lamb Chop "Lollipops"


Ingredients
1 pound Domestic Rack of Lamb
1 ounce Texas Olive Oil
Salt & Pepper

Directions
Heat saute pan to medium hot temperature
Pan sear lamb 3 minutes on each side (for rare to medium rare)
Salt & Pepper to taste

Texas Chimichurri Sauce

Ingredients
1/2 cup Texas Olive Oil
1 tsp chopped fresh rosemary
1 tsp chopped fresh thyme
1 tsp chopped fresh parsley
1 tsp chopped fresh garlic
Salt & Pepper to taste

Directions
Combine all ingredients in a large mixing bowl

Fresh Blackeyed Pea Relish

Ingredients
1 pound fresh blackeyed peas
1 tblsp chopped fresh red bell pepper
1 tblsp chopped red onion
1 tblsp chopped cilantro
2 tblsp Texas Olive Oil
2 tblsp fresh lime juice
Salt & Pepper to taste

Directions
Cook peas in boiling water with salt for 15 to 20 minutes until done
Drain and chill
Combine with remaining ingredients

"Killer Eggs"
Pan Fried Cornmeal Crusted Deviled Eggs
with  Roasted Jalapeno Aioli
&
Citrus Pickled Red Onion

"Lamb Chop Lollipops"
Pan Seared Rack of Lamb "Lollipops"
on a bed of Fresh Farm Blackeyed Pea Relish
topped with Texas Olive Oil Chimichurri

Hector Garcia, the owner of Hector's On Henderson
 was there as well
This is a restaurant I've been really wanting to try
so I was very excited
to meet both Hector and Jorge

Hector's on Henderson will be participating in Restaurant Week
kicking off on August 13th

I totally recommend the cooking demos at DFM
